    Gator Gar... The skin is like Kevlar! We use a hatchet to hammer up the spine from the tail to the head and skin the scales off the meat and then the meat off the ribs.

    It’s a choupic. It’s the first one I’ve seen/caught in my life. They only hang in super fresh water and I grew up in brackish marsh so never really had an encounter.
