    Stuff with some other black things
    Triggerfish in the Gulf of Mexico are awesome. Use a hooked razor blade style carpet knife to make the cuts through the skin. The meat is very pretty but watch for a little bone on the fillet close to the pectoral fin. Honestly, they taste similar to small grouper and better than snapper.

    It tasted great! really flakey and big flakes but fried most of it up and made some ceviche with one fillet. The other fish were a mix of vermillion snapper, red porgies (white snapper?), and tomtates (ruby red lips?)
