    Indian Stuffed and Baked Raccoon with Apples

    Amount Measure Ingredient Preparation Method
    1 md Raccoon
    4 lg Onions
    4 Strips salted pork
    2 c Beef stock
    5 lg Tart apples
    2 tb Butter
    1 t Cinnamon
    1 c Dry bread crumbs
    1 t Salt
    1/2 ts Pepper

    Skin and clean the raccoon. Wash well and remove most of the fat.
    Place in a large soupp kettle, cover with water and bring to a boil.
    Lower heat and simmer for 30 minutes.

    Peel, core and dice the apples into a mixing bowl. Melt the butter
    in a small saucepan and add the cinnamon, breadcrumbs, salt and
    pepper. Mix real good. Take the racoon out of the cooking juices and
    cool. Stuff the raccoon and sew up the cavity. Place the raccoon,
    breast down on the rack of a roasting pan, with the legs folded under
    the body and fastened with a string. Drape the salt pork over the
    back of the raccoon and fasten with toothpicks. Place the onions
    beside the raccoon on the rack.

    Bake at 400 degrees for 10 minutes to brown the meat. Reduce the
    heat to 325 degrees and add the 2 cups of beef stock. Cook for one
    hours, basting as often as possible. Transfer to a heated platter
    surrounded by whole onions.

    actually they are good eating but I don't eat em. my uncle used to sell them in his store and they would sell out the same day he filled the freezer, its a staple in the kitchens of many poor families

    opossum, raccoon, rabbit, squirrel, armadillo, musk rat, they all are basicly cousins in the same rodent family and taste the same and you would like eating them as long as no one told you what it was

    This is pretty much true. There are alot of critters that eat just fine, but since they arent the "norm" you kinda assume they arent good eating. My step mom is an ultra city girl, hates the outdoors and refuses to eat anything thats not off the store shelf. My dad and i got so sick of her whining about eating deer and elk it just got to where she didnt know it was game meat if ya know what i mean, and guess what?
    "Man this is really good meat! Whered you get this from? The butcher shop down the street?"
    Its all in your head like ole keakar said...

    More often than not id say the store meat can be the most questionable of all really...u dont know anything about it! Where it was from, how old it is, how nasty was the dude that cut and wrapped it, lots of variables there...for store bought meat they also put that red dye in it too so it looks "fresh"

    Yeah, I have seen some meat in the stores that is definitely questionable looking!! I agree with that for sure.

    As far as red meat goes, we are lucky because Eric's boss has a cattle ranch as his "side" business so he gives employees 50lbs of beef every year right around this time. Gotta start making some room in the freezer soon! We know he has high standards in how he raises the cattle and handles the meat, so that is really nice. Although I do get a little burned out on hamburgers after a while.......would be nice if he alternated with cash instead every other year or something! :D

    I gotta admit, I do not like the gamey taste of venison. And knowing the types of diseases and parasites that the little critters carry - that is what makes me most grossed out about eating something like raccoon or squirrel, as opposed to a taste thing. Not sure if I'd like the taste of stuff like that or not. Had squirrel once as a kid when my grandpa killed one, and I don't think I liked it.

    Ya know i wonder what it is when people have gamey tasting wild meat? Ive eaten it since forever and people like my step mom for example cant even pick it out when served. I think it must have to do with when the animal is taken. I think how its handled and aged has an impact on flavor too. Seems like when they are in rut is when they get stinky and have funky tasting meat. As opposed to when they arent boiling with testosterone and constantly running around only thinking about breeding.

    A hunter I know said it has to do with their adrenaline levels when they are shot. He seemed very confident about his theory. He said if they see you coming for them and their adrenaline is all amped up, the meat is tough and not as tasty from all that adrenaline. But if it's a sneak attack, then the meat is best. Kinda along the lines of what you are saying.........

    im not a hunter but im told if the animal is dropped instantly and dies instantly with relaxed muscles and the testies are removed quickly there is no gamey taste to it at all but if the animal runs off and dies slowly, then the increased blood flow into the meat makes the meat tough and it taste gamey because adrenaline gets pumped throughout the animal.

    this is how it was explained to me why some meat is tough and gamey while other isn't, that plus age. older animals have tougher meat then young ones which is why the bigger and older "trophy" bucks are not the best eating

    Ive hunted ever since i legally could and have eaten lots of different elk and several different deer including three different species of them. They have always been great tasting without any of it being "gamey" tasting. I or my family have taken them in all sorts of different scenarios, like dead instantly to having to track them for a bit. So while i dont think that has to do with taste i do believe it has an impact on tenderness. But with that said i feel if its aged appropriately that becomes a non issue, as the aging process starts breaking down the muscle tissue dirsctly impacting tenderness. I have however had some pretty tough meat reguardless of the age of the animal. But everytime thats has happed the meat didnt age very long before it was cut and wrapped, im sure that was the problem. Depending on the "cut" of the meat makes a tenderness difference too, just like any piece of beef ya get at the store, some cuts are just better than otheres. Even our store bought meat hangs for days and days till it damn near starts molding or does mold on the outside and thats all for tenderness of the final product.

    As far as that nasty taste game meat can have...i have experienced that for sure and it tastes like shit!! But any time thats happened it was always someone else's critter and with that said it has every single time been an archery kill. The archery seasons are open during the rut, so breeding is the only thing on their mind!! Testosterone is flowing big time and their glands are pumping out lots of smelly stuff aswell. I think that solely is the big difference between good and bad game meat! When theyre in the rut they just plain stink! Inside and out! So i really believe when people have bad experiences eating game meat, it boils down to how it was cared for and most importantly when it was taken during the year.

    Dont know if thats really why, but thats been my experience atleast. ....i do know fur sure however that there are ALOT of wives tales that still circulate around the hunting community, some of which are pretty amusing sometimes....

    Big smelly raccoon with what looked like severe scabby mange on his body had taken up residence in the top of the garage rafters. He was in bad shape. Broken teeth,,ect. Stealthy one, never heard him sneaking in and out at night. Tried to lure him down for quite some time with food in a live catch trap I borrowed from a buddy. No avail. $175 to have him removed. Not paying that. His end was swift and utterly painless. Was more worried about missing the shot and blasting a damn hole in the side of the garage I recently re-sided, as I stood on a really crappy ladder,,or pissing him off and have him race for my jugular.

    No need to hate, I do swerve to miss them if I can and safe to do so. I lost count of how many didn't make it over the fog line in my profession.

    Little ones running around here grabbing scooters and basketballs out of dark corners and really didn't want them or him surprised.

    One hell of a nest to clean out and de-louse afterwards, and I found a couple items that went missing.

    Sept archery animals caught in the open in the PNW really stink. Horrible steak taste always due to the rut. 1 in 4 taste good, and that's about it. They are turned into smoked pepperoni usually. Sometimes, it's better to pass on them all together and give the butcher the meat and donate the hide. Never flung a arrow at one, because it has to be a very precise shot up close,,and I make to much noise. They run in a full bore panic when I show up. Probably scared them witless.

    Ugh. I swear, we seem to grow the biggest, knarliest, nastiest racoons in the PNW!!! What's up with that???

    I say OH YES, there is a need to hate. They have become way too overpopulated in cities like Portland and Seattle, I suppose in large part because there are no predators for them in the cities. And there's all the damn fruit trees everyone throughout the PNW, including in the cities. Funny, I used to love fruit trees and grape vines. Til I learned just how much they attract coons to your yard. Ugh. Glad you got rid of another one. There's probably 10 new ones for that one that you got, LOL. Just can't get rid of them fast enough, I say!! Keep shooting them. Wish we could shoot them in the cities. Us city dwellers are counting on you folks that are allowed to, keep up the good work Mod!! :laugh: Really though, they are a major carrier of some nasty diseases. Yuck. And they are absolutely evil. You're right, it could be seriously tragic if a little kid happened upon one by accident....

    Did I mention I don't really care for raccoons? :D
