    You can also wrap them up and let them sit for 30 minutes to an hour if you want to let it rest/finish cooking.

    I worked at Smoke on the Water for 3 years in downtown greenville as a manager and became very adept at running a smoker. We ran it 24 hour a day and smoked everything from prime rib to wings. I love it.
