Condensation that doesn't ever evaporate also. Bring some of that brisket up here when it's done that clear any cobwebs out of it.

It is kinda a bandaid but better than just hopping in cranking up and going. That at least got the truck warmed up. I told a guy who drives about as much as you to just once a week go get on the hwy and drive to run an errand or something. Just to blow everything out and give the engine a little workout.

    When will it be ready?

It went on the smoker about 15 min ago. I broke out the tent and set it up over my cheating (electric) smoker so it won't be too miserable. Using pecan wood for smoke this time. You cook it to 202 degrees or what?

Reckon I'll give that a go then! I never got into wrapping the butts I do, but these guys are so much thinner than a butt so I'm worried about the drying out. Cool cool

Yeah I'm keeping mine at 225 for the duration. What park y'all going to? This pecan smoke is smelling righteous right now. I haven't smoked in about a year I don't think. Damn I miss this

Do you still have that horizontal barrel smoker? Or did you get one of them fancy eggs? I always like hearing about people reusing charcoal that they were able to starve enough air from by closing their dampers lol. You could never close mine off enough to even slow it down haha

Nice! One day I'll get me one too. How's the egg knock off perform compared to the egg?

I’ll have my girl snap some when she gets home. I’m in Ohio right now. I just want them out of my shed. Need room for other things.

I may have to keep my eye open for a sale or something. I do really like the idea of ceramic smokers
