I’ve had my 07 for a couple years. 86k now and it runs great but would anyone recommend changing plugs at this point or would I be wasting my money? Thing is I don’t know if it’s running at peak performance because I have nothing to compare it to.

Just follow the advised regular scheduled maintenance. It's been working well for Toyota for billions of miles.

Plugs are cheap and easy to replace. If you leave them in for too long they may be harder to remove. And then you will have to start a thread about a stuck plug.

Change every 30K miles with the plain copper Densos per the manual.
