The leather on my 2006 has seen better days. It is beginning to look worn and I'd like to renew it.

Can the airbag in my current steering wheel be transplanted into a new steering wheel? or do you have to replace it all at once? Anybody have any info?

yes you can swap the outer part of the wheel. Mine started to show signs of wear after a year of having the truck, so I got a wheelskin cover for it.
