Pressure cookers and crock pots are your friends when meal prepping.
one of my favorites is pork roast in a crock pot.

season the pork roast and stuff it with garlic and onion (not totally necessary, but adds flavor)
chop onions, potatoes, and carrots into big healthy chunks
add it all to the crock pot with mccormick slow cooker pot roast packet -and/or the Lipton onion soup packet-
cook for a few hours until roast falls apart
add water as necessary
cook some rice and manger cher

depending on the size of the roast this can last up to thursday if you only eat it for lunch

 

Me and some buddies had our bars planned out by night of the week to save money, haha. Every night there was power hour ($1 wells) at Firehouse from 8-9 and then the same at Bourbon Street from 9-10. Some of the guys that were from our high school but a few years older took us out to Classic city saloon for happy hour my freshman year, $5 long island pitchers. Definitely puked the first time I tried to hang with them.

Our favorite was on gameday weekends we'd go play pool at Molly O'sheas on Fridays. $1 drafts (always Killians, thought we were fancy), $2 apps, and $5 jager bombs that came with that week's gameday t-shirt.
