    Cast iron is the best. It's like hibachi. You can keep the heat steady, and move the pan around so each person gets their onions and mushrooms done to their preference.

    In this particular scenario, the other eater didn't want mushrooms, so I'm having one burger with sauteed mushrooms and relatively crispy onions with garlic, and that other portion there in the middle about to get charred for the second burger.

    While I love my cast irons, now that I have 2 carbon steel pans 10" and 12", I must say, I haven't used my CI pans nearly as much as I used to...Those carbon steel pans get the lion's share of abuse now, without the weight of a cast iron to deal with. Our 12" cast iron is a workout to use.
