I've been looking all over TW for someone with the exact set-up below and wanted to know if you get any rub (full turn and at an angle is probably worse case interference)

265/65/R17 OR 265/70/R16 on stock height and 0 offset.

I've seen many people say there is slight rub on inclines/declines at full turn with the same offset but +1" tire size, but wanted to know what's out there keeping the factory OD. I don't see the offset changing from +30 to 0 causing significant rub but wanted to be sure before pulling the trigger on new wheels.

Going from +30 to 0 is an 1 1/4”. You should be fine with the tire sizes of choice. Just get an alignment and have the tech set the caster at the higher end of the range.

stock size tire at 0 offset = no rub whatsoever
I've put 16x8 and 18x9 wheels on my Tacoma with 0 offset keeping tire stock, no rub under any circumstance
