Another option would be to fill the hex head of the bolt with epoxy or something. Even silicone. It just makes it that much more difficult and time consuming for anyone attempting to take it off.

I have a light bar with custom mounts on my prinsu rack. security screws all around, locktite and it was such a bitch to put on, it would probably be easier to just jack the whole rack than the light bar on its own.
