I might be wrong but my understanding was only TRD Sport 6MT trucks had hill start assist. The Off-Road's and Pro did not have it. For me it works on most hills with no input from me, and I am unaware of anyway to disable it. I was hoping you had secret knowledge!

I’ll refer you to my own vid explaining this, because I see a lot of confusion on it.

Auto trucks have hill start assist too, it just work’s differently (worse).

As usual I was talking out my ass and rage posting because someone didn’t read previous posts…
I don’t have a manny and have never been in a hill-start situation but just to play devils advocate:
The manual pages you posted a year ago list 4 conditions for hill-start to operate, the first of which is “The shift lever is in a position other than P or N”

Perfectly understandable assumption. I’m not sure why they even have it… Makes sense in MT, AT not so much.
This video is great. Thanks for sharing

Toyota seems to have a very aggressive abs and hill control. My wife has a new rav4 and drives a lot of dirt and backroad. She claims it engages abs and hill features on her way too often.

It’s not the hill start assist . It’s the traction control…. And I do have to turn it off..

Why do you think it’s trac and how would you be able to tell the difference? They are the same thing except for the conditions under which they are activated. If you stopped on a hill and your trac light comes on when you let off the brake: it’s hill-start.
Next time you stop on this hill, put it in N then back in gear or pull the P brake for a second and release.
Edit: maybe either of those things have to be engaged when you release the brake. Idk. Did you watch the video above? Is that not what you’re experiencing?
