Summer Time, windows down.. Oh crap, that noise doesn't sound right...

    SO, I am not sure how to stat this post I should probably start with how I recognized an issue. I was driving home from PA windows down enjoying the weather in heavy traffic. I locate my parking spot and turn off my music (this is what was weird, I never turn my music off before parking). Since the windows were down I was able to hear the slight issue going on with the vehicle. In reverse I hear a very sleight grinding noise and a noticeable clicking sound (about every 1/2-1 full tire rotation). I thought it noticeable enough where I need to investigate a little bit. I through it back in 1st and zig-zagged around the parking lot a little bit. I still heard the clicking noise, but it was even quieter (it wasn't loud to begin with, but you get to know the sounds a vehicle makes when you drive it long enough and this one is new).
    I went to the bar had a few beers then decided I should go home. Walking up to my truck I decide to investigate a little more (I know almost nothing about diagnosing issues. I am equivalent to the guy who has a blown tire and sits on the side of the road with the hood popped trying to find an issue). I crawl under the truck and do a "feel" test of the CVs. There was very minimal movement both vertically and horizontally. It was too dark for me to see if there was any cracks or breakage in the boots. I got in my truck and decided to replicate the issue. I couldn't. I drove home and tried to replicate the issue again, and its back. My guess is that something needs to be at driving temp to replicate the issue.

    Things that were fixed over the winter that might have effected this:
    - U-Joints from transfer case back
    - M-Trans fluid (looked ok but I did not know how long it had been in the vehicle so I changed the fluid)
    - Carrier Bearing
    - Wheel bearings (both front drivers and passengers)
    - Brake pads and roters

    Things I should probably check:
    - U-Joints from transfer case forward
    - CV boots

    Does anyone have any idea what this could be or anything else I should check?
    For reference the truck is a 2011 ACLB TRD OffRoad manual trans with no lift on stock sized highway tires (one day I will lift it with mud tires..). I have about 120k miles on it.
    Last week I spent the week fishing the front beaches of NJ driving on very soft and churned up sand. this may have caused the issue, but I don't know for sure as my music would definitely drowned this noise out.

    Does the noise change when you apply a bit of brake pressure?

    I tried to listen for the noise under break pressure, but I have to go so slow to hear it that any break pressure blocks out the sound and quickly brings the vehicle to a stop.

    Grinding noise makes me want to say a really bad wheel bearing, and clicking probably a failing Cv axle.
