    (Dumb Question)
Was wondering if switching from the 245 to 265 change my speedometer or any noticible change? Will my truck sit higher?

Maybe a 1/4 to 1/2 inch taller and no it will not affect the speedometer as most of the trucks come with that size from the factory.

the 265/70r16 are also a stock tire size. You'll barely notice a difference

both of those tires are effectively the same diameter. You will likely loose a smidge in the MPG department due to a wider tire, but that will mostly be effected by weight of said tire.

if you can perceive a speedometer change resulting from a difference of 1/10” in tire diameter, then you’re one perceptive SOB!

I went from the 245 to a 265/70-16 to a 265/75-16 to a 265/70-17 and did not notice any realistic change in mpg's. As for speedo, the last two slightly oversized tires actually corrected the speedo to be accurate, instead of reading a bit high.
