I’m looking to get some new rims+tires and have a few choices and looks picked out
Will 18x9 rims with a offset of +1 fit into 265/65/r18 into a stock Tacoma with no lift or level without any rubbing?
    I know nothing about tires

Typically the tire manufacturer will list the recommended wheel width in the specs, but I will say 9” seems wide for a 265mm tire. Stock wheels are 7-7.5” for a 245-265mm stock tire.

Seems like the recommended tire size on the website is 265/60/r18

Huh? I meant that tire manufacturers usually list wheel width in their specs. I’ve never heard of it ever being the other way around.

It would help if you linked the exact wheels and tires you are thinking about.

It's good to start reading to get information for yourself. 18x9 sound like they would rub with that tire especially with no lift.

One other point… if you know nothing about tires as you said, stick with stock wheel and tire sizes or do lots of reading. It’s easy to buy stuff that doesn’t fit and it’s typical for the retailers to charge a restocking fee if you screw up.
