Well a little over a week already doing all the cooking cause wifey had to go Oahu cause her grandmother died and it left me to do everything. Im not the best cook but i do a little so i was thinking if the guys or gals could give some recipes of quick and or BIG PRODUCTION meals, something that any of us can reflect on when we need something to cook for the kids or the whole family or just a quick snack!

I think it would be interesting to see what kinds of food people make especially in different regions, some totally different and some very similar i am assuming. Pictures would be nice but not needed just a detail instruction, ill start mines off of what we had tonight for dinner which was steamed furikake salmon.

    ingredients:
    Steamed Salmon
1 large filet of fresh salmon
    1 plain small yogurt
Same amount of mayonnaise as yogurt
2/3rds the amount of yogurt with butter
    cup of chopped green onions
    Furikake
    1 Ti leaf

    Instructions:
Pre-heat oven to 350, Get tin foil that is enough to cover and wrap salmon and place in pan, next place your rinsed Ti leaf on bottom and place your filet on top. IN a large bowl mix the yogurt, butter, and mayo together and pour it over the salmon, next sprinkle the green onions over the entire salmon then sprinkle with the furikake to your liking, next bring the ends of the foil together and seal it to wrap the salmon to steam, then bake for about 20-22 mins and there you have it!

Here is an easy one. Marinate chicken thighs over night in terriyaki sauce add honey and put some fresh ginger through a garlic press and what ever remains in the press take out and through it right in the bowl. The longer you marinate the better but you have to use thighs. Grill and enjoy..... super easy and taste really good!!!

I know that it has something to do with putting all of the ingredients into a jar and burying it in your back yard for months. I like it but .... dont like the process to make it.

Just finished pulling 3 lbs of short ribs that I braised for the past 3 hours. Going to make it into a ravioli filling tomorrow..... should be good. I am a little nervous because I am going to use wonton wrappers as the ravioli shell.

    Ingredients

    • 3 tablespoons olive oil
    • 2 ounces chopped pancetta (about 1/2 cup)
    • 2 1/2 pounds short ribs
    • Salt
    • Freshly ground black pepper
    • 1/4 cup all-purpose flour
    • 1 medium onion, chopped
    • 1 carrot, chopped
    • 1/2 cup fresh parsley leaves
    • 2 cloves garlic
    • 1 (14-ounce) can tomatoes (whole or diced)
    • 1 tablespoon tomato paste
    • 1 teaspoon chopped fresh rosemary leaves
    • 1 teaspoon dried thyme
    • 1/2 teaspoon dried oregano
    • 1 bay leaf
    • 2 1/2 cups beef broth
    • 3/4 cup red wine
    • 4 to 6 teaspoons shaved bittersweet chocolate
    Directions

Place the olive oil in a large heavy soup pot over medium heat. Cook the pancetta until golden and crisp, about 4 minutes. Meanwhile, season the short ribs with salt and pepper, and dredge in the flour. Using a slotted spoon, remove the pancetta from the pan and set aside. Add the short ribs to the pan and brown on all sides, about 7 minutes total.

Meanwhile, combine the onion, carrot, parsley and garlic in a food processor and blend until finely minced. Then add the tomatoes and tomato paste and pulse.

Once the short ribs are browned, carefully add the mixture from the food processor to the pot. Return the pancetta to the pot and stir. Add the rosemary, thyme, oregano, bay leaf, beef broth, and wine. Bring the mixture to a boil. Reduce the heat and simmer, covered, for 1 hour and 15 minutes. Remove the lid and simmer for another hour and a half, stirring occasionally. Remove the meat and bones from the pot. Discard the bones. Shred the meat and return it to the pot. Season with 1/2 teaspoon salt and 3/4 teaspoon pepper, or to taste.

I am going to put that into a ravioli shell. I have put it on pasta though.... something heavy like penne or ziti. Its real good that way too.

And tigahshark that recipe that I gave you for the braised short ribs... put that mixture into wonton wrappers then slowly drop into boiling water for around 5 minutes. In a small sauce pan melt butter then take a bunch of sage leaves and ball them up in your hand and squeeze like you are trying to ring them out and drop them in the butter. Once the butter is melted turn off the heat. When the ravioli are done put a spoon full of the meat that you did not use to fill the ravioli with on a plate put the ravioli down and spread a spoonful of the sage butter on top and enjoy.
