    Thank you very much! I will be trying this this summer! I would have thought you'd use a cider yeast/ champagne yeast. I will use ale yeast if i don't use champagne yeast.
    I've been clearing with gelatin finings with excellent results. I'll probably use pink lady or jonagold apples.

    I will say though, that POG NOG we had last night was really good. That one was from NY. @Smashing you ever get Decadent Ales beers? That's your hood-ish

    Champagne yeast would take the FG much lower than I'd like, so I prefer to use ale yeast.
