    To the nose it's very sweet, almost a fruit like appeal. I swear that the peat from the scotch is coming through along with a light smoke finish. Kinda like a black scotch.

    My cream ale is coming along nicely. Still a strong corn flavor but it usually mellows. I did use two pounds of flaked corn though...

    Recipe:
    6# 2-row
    2# flakes corn
    1# flakes rice
    1/2# honey malt
    Mash at 148f or so 90 mins
    1/2 oz magnum (what I had) 60 min

    I did enjoy it but like you said, I can see where it could be tweaked. A longer stay in the barrels would be interesting. I'm typically not a fan of smokey Scotch but do enjoy Rauchbier (sounds odd). I don't home brew but would be interested to see where I could obtain barrels that have been used for wine or spirits. Cask aging just seems to bring so many interesting elements. A Mexican lager aged in tequila barrels always wows me.

    I’m a fan when it’s fresh. Unfortunately the TJs I frequent never has it fresh...

    That same brand made a imperial stout that was pretty raw fresh but amazing after 6 months or so.
