Are we talking about Abby Brewing out of New Mexico? Never have come across them in Texas.

Nope, actual Trappist monks... their monasteries are referred to as an Abby and are all across Europe (Belgium, France, etc.). Many of them brew batches that they drink themselves and sell excess to help support the order. Your local releases have nothing on some of them. Since they don't really communicate with the outside world, it is one of those... the doors are open, so something must be afoot...

Reminds me of Dat Dog and a few places around here. Can't tell from the rendering, but common here is to have those windows as actual roll-up garage doors - That way they can open for more of a "patio feel" when the weather is nice.

Ok. The Chimay and Rochefort are pretty easy to find around here. I know the Abby Monk series is monastery brewed but I don't think they're associated with the Trappist. They are however on my list of breweries to visit. Place looks interesting.

Yep, those are common and aren't necessarily the best representations. If you drift in this style, you will see what I mean.
I looked them up, and it's a good read - https://www.abbeybrewing.biz/ They are a Benedictine order.

The only baltic porters I've had have been grossly sweet. I have one in my fridge i've been "cellaring" for like 1-2 years to see if it gets any better haha

Got some of that good black market stuff in Belgium. Definitely really good when done well. Also, some amazing Gueze/Krieks and cool drinking spots. Uuugggghhh I want to go back...haha

Agree wholeheartedly... my brother used to travel there for work twice a year and would suitcase smuggle a couple for me. I can't remember the place he loved to go... the beer menu was 8 pages long and looked like a book!

Honestly, that could be a LOT of places there haha. I went to a few in Bruges, and one had a beer menu like 15 pages long. something like 300+ beers to choose from (https://www.brugsbeertje.be/en/home-2/). I smuggled some Cantillon back and a couple Morte Subite. I should have gotten more of the Westvleteren 12 for sure, just didnt want to lug them all over Europe the next week and a half, and was holding space for the Cantillon. Our damn room in Amsterdam was on the 3rd floor, no elevator, and steep. I carried a 50lb bag up that thing and regretted the 20lbs of beer in it already haha.
