    My new Simcoe Amarillo IPA. Dry, hoppy, light. Not the fruit flavors I remember from this hop combo, but pretty good if you ask me.

    I really like it. A lot of floral/piney hops. A bit of a sweeter finish like a traditional red. The 9 percent is very well hidden. Kind of forgot what I was drinking until I stood up to use the bathroom and had one of those "whooaaahh" moments.

    I held out 9 whole days to try this beer! Probably a record for me. I’m glad I waited as it is almost there.

    Not as roasty as a stout, but that’s what I like in my porters. I can almost detect a hint of vanilla, but there was none added. Medium body and a not quite brown head. It’s hard to tell from a picture, but it’s also not quite ink black. There’s a nice red hue when held up to the light.

    Good luck! I haven’t nutted up enough to try brewing one up yet. What hops are you going with?

    Also, whatever happened with your tripel? Get it carbed up yet?

    For the hops I'm pretty much sticking with the recipe. Centennial, Azacca, El Dorado and Hallertau Blanc.

    On the tripel, I dosed 6 bombers with with a bit yeast and recapped. Going to let'em set another couple of weeks.
