    I've made a batch every fall for the past three years and I've learned from all of them. Sanitizing may only get you so far with cider. Sometimes there is still wild yeast that is active in the cider even though it has supposedly been pasteurized. I added campden tablets to kill any yeasts in the cider. Then wait a few days before adding your yeast. It can also take a while for cider to develop clarity. Adding a very small amount of pectic enzyme can help solve this.
