    You’ll have better luck with honey malt. Actual honey is 100% fermentable and doesn’t really leave any flavor. Don’t over do the honey malt though. I used to use about a half a pound in a cream ale.

    You probably stressed the yeast out with the alcohol content of that mead so they couldn’t finish digesting the sugars in the honey and left some residual flavor.

    As far as honey malt I think my 6gal honey cream recipe was about half a pound honey malt in an 8.5# total malt recipe.

    I mean, at 19% ABV, I'd say I probably hit the limits on the yeast's tolerance, yes. But then, that's usually the idea with mead. And they were very definitely dead after I added in the stabilizers.

    No beer this Friday, going for some nice bourbon.
