    Gose time again, 10G batch. I will make 3 to 4 variants. Regular, Mango, Cherry and maybe Tangerine.


    10 lbs. (2.3 kg) German wheat malt
    7 lbs. (1.6 kg) Belgian Pilsner malt
    1 lb German Acidulated
    1 lb Rice Hulls

    Mash in @ ~149

    Sparge @175
    Boil for 10, chill to 100,
    Pitch ~40 capsules Walgreens Probiotic (L. Acidolphus L. Rhamnous GG blend) (10B cells/capsule)

    Hold for 12-24 @100, when happy with sour level, boil again.

    1.5 oz Saaz first wort
    15 g coriander seed, freshly ground (0 min.)
    20 g kosher salt (0 min.)


    OK, I was getting paranoid about the wheat and probably didnt need the rice hulls, but it cant hurt. Oh, and my sparge is going really slow, even at full open on the mash tun, so maybe that was the right call.

    Next time I will probably try Zainisheff's Kettle mash idea instead of Gordon Strong's probiotic method. I did however, order a couple bottles of the L Plantarum probiotic Gordon Strong recommends, because I couldnt find it locally. I also ordered 2 bottles of Phosphoric 10%, which is what he uses to adjust PH on RO water. Our local store doesnt carry that strength.

    Gordon calls for chill/hold at 90, but let's face it, we are talking lacto cultures that reproduce just fine in your gut at 98.7. I also looked it up and max propagation for L. Acidolphus is ~99. Shocker.

    OK, these are German Pils, its from Breakside, who make an awesome Pils. Note the late hop addition technique. You can change hop as desired.

    Ben Edmunds, head brewer for Breakside Brewery in Portland, Oregon, shared this recipe for their classic German Pilsner with an emphasis on late-kettle hops.

    ALL-GRAIN

    Brewhouse efficiency: 88%
    OG: 1.049 (11.5°P)
    FG: 1.010 (2.6°P)
    IBUs: 26
    ABV: 5%

    MALT/GRAIN BILL
    7 lbs 6 oz (3.35 kg) German Pilsner malt

    HOPS SCHEDULE
    0.4 oz (11 g) Opal [8.7% AA] at 60 minutes
    0.8 oz (23 g) Opal [8.7% AA] at 10 minutes
    3.2 oz (91 g) mixed low-alpha German hops (Hersbrucker, Tettnanger, Mittelfruh) at the end of boil/whirlpool

    YEAST
    Augustiner yeast—Ben suggests White Labs WLP838 Southern German Lager.

    DIRECTIONS
    Mash Temperature: 151°F (66°C), then mash out to 165°F (74°C).

    Adjust water to hit a mash pH of 5.4.

    Boil for 75 minutes (to drive off DMS) following the hops schedule.

    Pitch the yeast at 52°F (11°C) and ferment at 54°F (12°C) for 5 days before raising the temperature slowly to clean up any diacetyl. Rack to secondary day 18 and allow at least 7–10 days of cold lagering time before packaging.

    Now there is an efficiency difference...
    Acidulated for PH and a slight twang.
    But hops not Saaz.
