    Good luck on the learning curve with the new pot!
    I have that same model, but without the clamp-on lid. 'warm' is just that, warm. 'Low' will do a good job on an all-day cook, but 'high' will burn things if left unattended, so be cautious.

    I nearly did that with a ham. Fortunately I was home at the time since it was my first time using the pot. I smelled the brown sugar I'd put on the bottom starting to scorch and was able to salvage it

    Exactly the one we have. Used it many times. Wife loves the clamp down top she likes to take stuff to work when they do a potluck and that makes sure nothing comes out easily.

    We had our work Christmas potluck last Thursday and I did my usual Tatar Tot hotdish in the instant pot, with slow cooker mode of course. I put the IP on the backseat dog platform that I built and on the way in the IP did a 360 from the drivers side to the passenger side. I almost put the crockpot lid on it but at the last minute put the locking IP lid on and carried the crockpot lid in a plastic grocery store bag with a serving spoon. Thank goodness, that would have been a hell of a mess. Locking lids are good...

    2 pounds med spice pork sausage (most people use ground beef)
    1 medium onion diced
    4 cloves garlic
    diced green pepper

    Caramelize onion and garlic in cast iron skillet and butter
    add pork and pepper and brown

    When meat is browned add:
    1 can cheddar cheese soup
    2 cans cream of mushroom soup
    2 cans french cut green beans drained
    3/4 cup frozen peas
    3/4 cup frozen corn
    3/4 cup of milk
    salt and pepper

    I prefer the Mini tater tots and start with a layer on bottom.
    Fill half way and then another layer of tots.
    Add rest of meat mix and then last layer of tots on top.
    Then cover with shredded cheddar cheese.

    May not look pretty, but it always get hits hard.

    Most stuff like this doesn’t look great but is very good lol. Your neck of the woods is known for hot pots and this looks like a winner.

    Tater Tots are one of the GF's favorites, so I always have a bag or two in the chest freezer downstairs.

    Had a half of a Cure 81 ham in the fridge and working from home today so decided to cook it. Would have liked to smoke it which I normally do but that would be pushing it while working. So did my first ham in the Instant Pot.

    Sliced it 2/3 of the way through and turned it on its side. Poured a can of crushed pineapple and juice working it between the pieces. Then a light coating of pitfaced rub. Because @bvbull200 makes some pretty good stuff. Everyone may not like it on ham but thought I'd add a little more kick to this one. Winner.

    Over top of that a heavy coating of brown sugar and honey. And some more pineapple juice.

    20 minutes pressure cook with natural release.

    Made a sauce with the juices in the IP. Added some lemon juice and Worcestershire sauce, cranked it up to saute and stirred in some cornstarch paste to thicken it. Ended up with 4 cups of the best ham sauce I have ever had.

    Finished at the same time work did. And it was good, really good.

    Left over ham and sauce will part of Christmas dinner. If there is any left by then. If not know where I can find more to make. Damn that was good.

    Dammit! Pitfaced was too sweet for me, but I never tried it on ham. I like sweet ham. :(

    Im making another batch of tamales...started the pork shoulder meat mixture in the crockpot. I forgot to put some garlic, onion powder last time. So this batch should be really good. I also added a couple bay leaves for flavor. I use these with good results.

    Came out way too spicy, had to cut it half way through with another small can of tomatoes and some brown sugar. Needs some serious tweaks in order to be shareable

    Albertsons near me USED to carry it but last time I went they didnt anymore. But these I ordered from walmart and got them a few days later. Packed nicely and didnt break anything. They might have them stocked at your local Walmart or grocery store in the Mexican food aisle.
