    White or yellow. Red (purple) is too strong for this dish IMO. If it were something asian where the onion compliments the flavor, Id say go purple.

    Went white. Blended it all up nice and good. Smells damn good. I'm debating if I should start it tonight and have it for the morning, or keep it in the fridge tonight and start it in the morning

    Not really about being broke, but just a simple recipe that is easy to make and only uses one pot (blender). Those are the best. Don't get me started about the dutch oven thread. Those guys over there got some good recipes too.

    It's all for me. I plan on this being a few days worth of meals for myself. Just not sure if I'll have time tomomorrow in the morning to pull it and package it all up before heading out to work

    The girlfriend has a recipe for Chicken Jalapeno Popper Chili as she calls it.

    4 tbs olive oil
    5-6 jalapeños, chopped
    1 small white onion, chopped
    3-4 cloves garlic, chopped
    1.5 lbs chicken breast
    1.5 cups chicken broth
    14 oz cannelini or navy beans
    14 oz corn
    10 oz diced tomatoes with chiles
    2tsp chili powder
    1tsp cumin
    1tsp oregano
    Pinch of red pepper flakes
    1 lb bacon (cooked extra crispy and crumbled)
    8oz cream cheese, cubed


    Add olive oil, jalapenos, onion, and garlic to the crock pot and stir. Add remaining ingredients except bacon and cream cheese and cook on low 7-9 hours. Remove chicken from slow cooker, cut into bite size pieces, and return to slow cooker. Add cream cheese to slow cooker along with half the bacon and allow to cook for 10-15 minutes. Stir and scoop into bowls and top with remaining bacon.

    Alright going to start the barbacoa in the morning. The crowler I had to myself tonight will be sure to keep me asleep longer than I want in the morning. I'll have some delicious fresh barbacoa awaiting me for dinner tomorrow night!

    I didn't get a 5lb piece of meat I got like a 3.5. Luckily I didn't get the 5 cuz it wouldn't have fit in my crockpot :rofl:

    5lb is kind of a lot, but when I was shredding mine I was separating the fattier parts for the pup. Didn't make a huge difference, but it was enough to notice. More than likely it was the cut I chose when I went to the butcher's though.
    Worst case, you can freeze the leftovers and they'll hold for a month at least.

    Got home a bit ago. Checked out the meat. Tried to shred (only 6.5-7 hours in) and it didn't want to shred. I have a meeting from 1-2 (now) so I just cut off a piece and made a couple tacos with it because I was starving. Tasted pretty good can't wait to try more in another hour. Hopefully it'll be ready to shred then

    My go to Barbacoa recipe is very similar to the one posted. I normally use a Sirloin Tip roast since it's leaner than a chuck, but to each their own.


    • 2½-3 pounds beef chuck roast
    • 3 tablespoons apple cider vinegar
    • 2 tablespoons minced garlic
    • 3 chipotle peppers, roughly chopped
    • juice of 1 lime (2-3 tablespoons)
    • ½ cup water or beef broth
    • 4 teaspoons ground cumin
    • 2 teaspoons dried oregano
    • 1 teaspoon salt
    • 1 teaspoon black pepper

    Whisk ingredients together and place roast in greased crock pot. Place mixture over beef and cook on low 7-9 hours. Remove and shred.
