    I browned the chicken then softened the onion, veggies, and added the spices. Easy peazy!

    Corned Beef Brisket.

    Brisket in a slow cooker? Are you serious?? And with Guinness beer and a complement of spices no less.
    Why not? I do like me some corned beef! I don't eat much in the way of beef, but I just have a desire for corned beef.
    Let's see how it goes...

    Shrug. I cook almost all of my corned beef in the crockpot, or in the instapot on 'slow cook' which is the same thing.

    Homemade beef stock, usually. Sodium-free beef broth would work as well, probably. I rinse the corned beef to get the extra salt off of it, slice an onion thin and layer it on the bottom of the pot. Then put the meat fat-side-up on the onion, fill around it with carrots & potatoes, scatter the spice packet over all of it, and add enough broth to almost cover the meat. Then 6-8 hours on low.

    i do the exact same thing but add a little minced garlic to the pickling spices and add a cup of Irish stout before the sodium free broth. Also, we do high for a shorter period of time(4-5hours) Comes out so moist and doesn’t fall apart when slicing. Cook the cabbage on the top the whole time basically steaming it throughout the cook.
    Picked up 3 briskets at Stop and Shop today since we have a deep freezer; will likely get 3 more while they’re on sale.
    A buddy of mine used to do the boil, then make a glaze and finish it on the grill for a little while to get a sweet crust.

    Can scale down for a 2-3lb brisket as they seem to be small and more expensive this year. 1 lb potatoes, 1lb carrots liquid proportions prob around the same as it’s all just a flavor boil.

    I see. I also rinsed the meat to remove some of the salt. I thought about using beef stock, but I found a recipe that uses Guinness. Turns out the recipe is kinda cheesy, so I went off the cuff after the Guinness.
    I mixed the stout with the season packet included with the meat along with minced garlic, ground coriander seed, coarse ground black pepper, and some thyme. I just covered the meat with this mixture and tossed the carrots, celery, and taters on top. Most of the veggies just got steamed as they were not submerged.

    This is my first go-round with corned beef in the slow cooker. It has another hour to go and if it tastes half as good as it smells, I got it made! :drool::drool:

    I miss cooking with Guinness. Or with beer in general, really. :pout:



    Same. I usually get 5 or 6 this week and freeze them, and then will make it periodically over the next year (almost always during cold weather)

    I bought a ready-to-go corned beef at CostCo. I haven't brined beef before, although I have bribed brined turkey and chicken.

    Turkey. I got ground turkey. And onions, bell pepper, Serranos, roasted Hatch Chilis, and some other stuff. I even tossed a Habanero and Green Chili sausage link in there for good measure.
