I wouldn’t skip it, it adds just a little something extra. It doesn’t taste “cinnamony” or anything like that. Then again, I haven’t made it without it :notsure:

I gotta figure out where to get oxtail around here. Maybe the big Mexican market has it.

You could substitute it for more bone in beef rib

Had my mind on the birria ever since. Found some cheap chuck ribs to sub the oxtail, brisket trimmings to sub the chuck roast.

Not sure how active this thread is, but I am making this tomorrow but a little modified to help lower the calories and processed foods slightly

    4 tbs olive oil
    5-6 jalapeños, chopped
    1 small white onion, chopped
    3-4 cloves garlic, chopped
    1.5 lbs chicken breast
    1.5 cups chicken broth
14 oz dry black beans (will make before hand)
3 corn on cob, corn cut off
    2 large tomatoes
    3 green chilis
    2tsp chili powder
    1tsp cumin
    1tsp oregano
    Pinch of red pepper flakes
1 lb turkey bacon (cooked extra crispy and crumbled)
    8oz plain Greek yogurt

I'll update with how it tastes

Chicken and dumplings is the plan. Adding peas later so they don't end up annihilated.
