    Tomatoes only belong in Gumbo if there is also Steak. See Seven Steak and Tasso Gumbo.

    Also chicken and sausage go together, or seafood. Okra goes with chicken but not sausage... I know... too many rules!

    No. Potato salad goes ON the gumbo. You don't stir it in, but take a dab on your spoon, then add gumbo to the spoon. Its typical of those... how can I say... from the area (bred, born, 5th generation, rooted, have never seen a city - kind of folks) that created this (as far as records show). the back woods/back country folk. Not the city/urban folk... Lots of german roots in Louisiana too. Maybe part of the creation? Same for Irish. You know... potato loving people!

    And thats precisely why I don't make potato salad! (well, that and Im not a huge fan of the carbs. I prefer to get mine from much more enjoyable foods!)

    But like regular 'Merican type tater salad?? Or is this german/irish influenced type tater salad??

    I'm kinda confused thinking that the backyard BBQ type tater salad goes with Gumbo. Not that I'm the know all of cuisine, just saying. Ya feel me??

    By the way, since moving to the Houston area, we've been able to enjoy some mighty tasty gumbo, and red beans/rice, and other Cajun favorites. Nothing like what we ever had in California. :D

    Call me crazy but if some one told me "you have to give up beer or pizza" it would be a no brainer, covered in cheese and maybe some bacon ,sausage, shrooms etc
