    Easy-peasy.

    Original Recipe:

    One whole chicken (minus innards)
    Put in crock or stew pot cover with water + 1”.
    Boil until cooked thoroughly.
    Remove bird, but keep stock water.
    Pick off all meat, return shredded meat to stock. (Discard skins)

    Add 3/4 of a jar of Wylers Chicken Granules. Cook for approx 30 minutes.

    Add one pkg dumplings (ain’t nobody got time to make fresh ones). Stir as adding as they will clump.
    Salt and pepper to taste. (Granules are pretty high in sodium, so salt sparingly)
    Let cook on low for about 2 hours.

    My version:

    4-5 chicken breasts in pressure cooker for 10-12 minutes, cover with 2-3” of water.
    Remove chicken and fork shred. Return chicken to stock.

    Follow remainder as above.



    Whole birds are cheaper than boneless/skinless breast’s but I don’t have the patience to pick apart a bird anymore. Other than that, it’s a pretty cheap meal.

    I’ve learned that this does not freeze well... works best for dinner then next days lunch or dinner or when serving a large family. (And it’s better the next day reheated after refrigeration.)

    I’ve also used this brand. Both are both usually in the frozen foods near the breads/rolls/Texas toast

    I used to make my own but I find my time more valuable and spend it elsewhere.

    I haven’t had a good Italian Beef since I was in Chicago several years ago! Sounds like a no brainer for some lunches :drool:

    We tried tenderloin once and it just didn’t have enough fat to keep from drying out. We always roast them!
