    A little prep work for spaghetti squash and meatballs in the slow cooker tomorrow.

    Forgot to take a pic of the prep. Just throw the squash and Italian sausage meat balls and pour sauce on top and set cooker on low.

    After 12 hours on low

    Then scrape the meat out of the spaghetti squash shell and mix well.

    End results on plate please. I'm not really a fan of squash, but with enough pasta sauce, meat, and hot sauce I'm sure I'd be able to palate it

    ALWAYS brown any meat before going in the crockpot. IMHO. Plus it's what I've always been told and what I've read.

    I can’t find the “right” stuff anywhere. Still has a good flavor and I ended up chopping it down a bit. I’ll get pics as I get it going tomorrow morning!

    Spicy Italian Beef
    • 3 lbs. chuck roast
    • 8 oz. pepperoncini (16 oz. bottle to have leftover topping)
    • 8 oz. Italian mix giardiniera
    • 1 packet Zesty Italian mix from Good Seasons (0.6 oz.)
    • Salt and pepper to taste
    • 1 cup water (warmed) and 2 beef bouillon cubes (can substitute for condensed beef broth)
    • French rolls or sub rolls
    • Provolone slices
    I trimmed the silver skin off of the roast and rubbed it with the Zesty Italian, salt, and pepper.

    I placed it in the crockpot with chopped/diced/sliced giardiniera and pepperoncinis on top.

    Not pictured: I added the beef broth around the edge of the roast so I didn’t rinse off the rub

    I set the crockpot on low for 8 hours and crushed the mixture with tongs

    Lastly, I toasted the sub rolls and provolone under the broiler and crammed as much of the mixture into the roll as I could possibly fit (topped with pepperoncinis)!

    It’s delicious, easy, and I have plenty leftover for lunches! For those of you who don’t like spicy, there are ways to tone it down, but there is always going to be a little heat.
