    I’m lactose intolerant, so it’s almond milk for me :(

    When I DO have dairy, I make it worth my while and get the good stuff.

    What is it, what do they say? YOLO, I believe?

    Have you tried Lactaid? The GF produces some pretty toxic gases after she drinks normal milk, but the lactaid stuff doesn't bother her (or me :bananadead:) at all.

    Didn't read all 85 pages, but here in my contribution - it is damn delicious and cheap.

    Italian Cream Cheese Chicken

    Chicken breasts (2-4 depending on your pot size)
    Package of Italian Dressing (NOT Italian seasoning, use the packet for making DRESSING, it's on the same shelf as salad dressings)
    1
    Block of cream cheese (none of the low fat shit)
    Cream of chicken soup (I normally do 2 small cans, but sometimes vary it with 1 cream of chicken and 1 cream of celery)
    Onion (if you have one, don't need it)

    Cook on low 4-6 hours. The last hour or so pull the chicken out and use a blender stick (or whatever tool) to mix up the sauce well so it is smooth. Put the chicken back in and cook for a little more.

    Serve over rice. I like lots of ground pepper on mine. I think it tastes even better the next day after it has been in the fridge.

    Usually I throw in a pack of egg noodles in the pot for 30 mins after blending the sauce, or serve it over rice...either way.

    Yes, that's a jug of almond milk. Doesn't answer my question about the Lactaid, though.
    Reason I ask is that using almond milk for baking or cooking sometimes has unintended consequences. For instance, mac & cheese just doesn't work right with almond milk

    We use milk as recipes require, but most of what we’re making doesn’t call for it. Things like mac ‘n’ cheese, pizza, and potato soup are part of the “exceptions” group - it’s all or nothing haha

    Should try using Lactaid next time; it behaves exactly like normal milk for cooking purposes, which is wicked handy when I'm baking or cooking.

    Stuff like that becomes a real "game changer". I was diagnosed Celiac little over a year ago. Damn near everything has wheat in it. Rethinkin' cooking would have been hell if I didn't know my way around a kitchen but I'm for ever searchin' for compatible substitutes.

    We’re working towards paleo as a staple. Most crockpot meals (that I’m aware of) don’t have gluten. I’m no expert, but I’ve found that substitutes are harder to comply with than going full on.

    I’m sorry to hear that it’s something you have to deal with. We have PLENTY of situations that we face, so if there’s any encouragement we can give or information we can collaborate on, please let me (us) know! That’s why we’re all here, right?

    My "go to" for thickenin' sauces & gravy's is cornstarch but you gotta watch where it's made. Some brands are milled along side of wheat. In that case they can't guarantee cross contamination.

    A friend of mine was diagnosed with Celiac a couple months ago. I didn't realize that when a place has gluten free offerings that it may not be recommended for those with Celiac to eat there due to cross-contamination. She did mention that in Ireland, apparently there is a Celiac section of restaurants. I imagine she'll slowly be getting more acquainted with the kitchen because she has been a bit of a fastfood junkie.

    Baked potatoes and sausage and cabbage soup in the same pot (oven roast bags will work for liners btw both Wal-Mart's were out)
