    Nada. It hydrolyzes at 500-600 degrees over the course of an hour or two. Thus, deep fried chicken poses a major threat because people think 365 degree boilers are safe.

    It sounds ridiculous and some don’t even show symptoms at all. Eating gluten won’t immediately kill you like a bad peanut allergy, but it constantly attacks the small intestines causing sickness and dramatically increases the risk of cancer. Once the small intestines is damaged beyond recovery, digesting dairy proteins is out of the question. You’ll often see the two hand in hand (gluten and dairy free).

    The most difficult part is explaining cross contamination. Placing a piece of bread on the counter and then preparing gluten free food on the same counter is pointless. It has to be deep cleaned or discarded (plastic cutting boards, Teflon, etc.). Lots of places offer “gluten free”, but without a dedicated prep area, it’s only meaningful for those dieting by choice.

    Certain restaurants do it — In n Out is an excellent example, but it is very limited.

    When the same prep area and utensils are used, that is correct. It’s also up to the integrity of the employees — are they changing their gloves? Is the fryer stand alone and not used for gluten products? Are the tongs shared or not? It essentially has to act as a restaurant within a restaurant. Sticking to 100% gluten free restaurants is always safer, albeit more expensive and harder to find.

    Anyone ever make a muffaletta sandwich?

    Ate a bunch of them years ago in New Orleans and got a craving recently. Looked up a few recipes and will be making some in the next few weeks.

    Not my picture but I wish it was lol. It's basically an Italian sandwich with an olive and pepper salad spread. Tastes amazing!

    The olive and pepper spread makes the sandwich so I'll dial that in first then make the sandwich. I'll make sure to get some pics
