When I decelerate my truck makes what I can describe as a fast pace ticking or rattling noise, the noise comes from middle to rear of the truck, and it vibrates over 40 mph slightly but noticeable. The noise doesn’t happen while at normal driving speed. I have a single piece drive shaft(after market) so I’m not sure if that has something to do with it and I also checked the ujoints and couldn’t see or feel any visble play, I’m thinking wheel bearing but I honestly have no clue.

Get the tires off the ground and rotate them by hand, rotate the drive shaft by hand, etc.. see if you can hear anything. Maybe get an automotive stethoscope, they are pretty cheap. You're thinking along the right lines though. You have to remove the drive shaft to really check the u joints though. Could also be bearings in the 3rd member / diff as well.

I jacked it up and spun the tires in neutral and heard no noise, I also put it in first and accelerated and also heard no noise, the bolts on the end of my driveshaft where incredibly lose (fingertight) but I tightened them but it still makes the noise any clue?
