I have an extra set of very good A/T 265/70r16 tires from my older tundra. Question i have is, are their any issues other than maybe fuel economy if i use them to replace the 245/75 16's le2 firestone's that came on the new tacoma which seem to skate around too much on the dirt roads here?

Nope....you're fine. You could even step up to a 265/75 with no issues next time around
