All vehicle manufacturers offer low option, low cost models of many if not most of their offerings. This allows them to be able to advertise low starting MSRP, and to minimize the number of wire harness types, ecu/software programming, etc. If customers were allowed to "mix and match" options at will, there would be hundreds, if not thousands of potential combinations resulting in an impossible number of wire harnesses variations.

There are other reasons too, like fuel economy targets.

The entire site is made of Toyota fan boys; its a Toyota Tacoma Owners and Enthusiasts site for a reason. As long as you can look past the obvious attention seekers, you can find stupid amounts of really useful information here. Welcome to the internet

I can't speak for Toyota, but I think its extremely clear why the combination you want from a truck isn't offered from factory; there's no money to be made (in comparison to the truck offerings that are having no problem selling for $20-30k more than they should). You can always just buy the truck you want and add a hitch/trailer wiring yourself with all that money saved from not buying the V6. Tons of threads here on how to do it.
