    Working on it now....UNDER CONSTRUCTION
I change my oils at 10,000 or 12 months miles with Mobil 1. I see no reason to change that. As far as the warranty is concerned, I have changes documented. Since I have 3 Toyota trucks it is important to document the maintenance.

Also, i just put in for a Blackstone labs oil kit to be sent to me, i have ran the proper amount of 5W-30 for 5k now, no engine issues to speak of, ill post the results when i get them, dont have the kit yet so it may be a week or two.

Wouldn't apply to you regardless of your year with the Tacoma because the 1GR-FE Tacoma engine is different from the same designation in the T4R, Tundra, and FJ Cruiser.
The block is the same. The heads, cam, and ancillary systems are different.

Worst that can happen is at 5k you're going to spend $25 for an oil analysis that'll tell you that you COULD have run that $30 oil change to 12k.

UOA is not economically viable without a bypass filtration system that allows extended drain intervals to 20k.

So it's my understanding that it is the additives that wear out over time rather than the oil. Is that correct?

    Yes and no.

Viscosity improvers are a part of the additive package, and this contributes to breakdown. Synthetic oils contain fewer viscosity improvers, so they hold up better over a given interval.
Example: Amsoil MCV and Mobil-1 V-Twin ran 6k in my bike and still remained in grade for a 50wt oil.
Royal Purple (supposedly synthetic) actually did worse than Castrol GTX (non-synthetic), shearing down to a 30wt within 2000 miles.
But Mobil-1 15w50 did only slightly better.

Those doing extended drain intervals using a bypass filtration system are generally changing their filters every 10k, and the quart added at that point is typically sufficient to restore the TBN (additive package), but it is dumb to run over 10-15k intervals without A) Used oil analysis and B) Bypass filtration.
