    Hot as in the dummy needle gauge hot or an actual temp with a scan gauge?

    Well the needle shows it hot, but I turn the heater on, and it cools right down, I never have to add coolant

    Which engine? Did you put the jiggle valve up or down on the thermostat?

    The engine is 3400v6 the work has all been done by a shop!! I have had it completely redone, all the cooling system, heads, gaskets timing belt water pump, and two different thermostats, and it still gets almost to the red, if I do not use my heater, it runs fine then!!!

    Many will disagree with me because Toyota said otherwise but I tried both 6 and 12 position and it made no temp difference. Readings were from a scan gauge with the same thermostat, just positioning the valve at 6 & 12 for testing.

    -5 minutes of idling on the drive way
    -5 minutes of stop and go traffic to the highway
    -5 minutes of highway driving
    -15 minutes return trip on side street coming home

    temp remain nearly identical the entire trip on both setting, a difference of 3 degree before turning the vehicle off on the drive way. The funny thing was, it ran cooler at 12 vs 6 but 6 was what factory recommended.

    Change out the engine coolant temp sensor, and the water temp sensor. The engine coolant temp sensor is for engine function, the water temp sensor is for the gauge display.

    first, I want to say thank you for the responses, I appreciate it, I also don't think my post reads correct?? I put it in the shop, redone the heads,radiator,fans,shrouds, water pump, timing belt, all new hoses, and gaskets, thermostats x2,complete new cooling system,runs fine until I start up an incline, turn my heater on, and it cools right down to normal, put new sensors in it, hooked it up to obd, and it reads good.. what is left that could cause this.. also there are no cracks, leaks, or fluids mixed at anywhere they are not supposed to be..it does not smoke, it has plenty of power,

    Hot based on the dummy gauge or a scan gauge? If scan gauge, what is the actual temperature reading?

    Snug top Rebel, Thule tracks, ditch tracks, Bagged rear suspension, F/R anytime camera, intermittent wiper switch...
    Maybe some trapped air.
    Might just need a gentle break in.
    Even “shops” can oops. They’re just people too so maybe a cooling channel got fouled. If an IR gun is available see if one of the cylinders gets warmer than the others.

    I would take back to shop ASAP b4 they say you did something

    OP, definitely need the OBD2 measurement. There are two coolant temp sensors, one for the gauge, one for the ECU.
