My 2002 has a stock system in it with an aftermarket headunit. I got the mid/tweeter cabinets pictured below and I want to add them to my truck. What type of amplifier do I need to buy? I want to add a subwoofer as well.

Something that makes 100W/channel would be a good start for these. Might be able to get away with just 1 amp for your sub too - depending on sub power required. One question though - with these behind the rear seats, where you gonna put a sub?

How many channels do I need? 'max music power 200W'. So RMS power handling is probably around 100W.

I was going to squish a sub behind my seats in front of these two. Kicker sells a sub that looks like these cabinets

You need 3 including the sub, but there are not too many 3-channel amps on the market. But you could use a 4 channel and bridge 2 channels for a sub if you could get enough power to a sub that way. Otherwise you'd want a 2 channel plus a mono.

There's more than one way to skin a cat. The entire speaker system can be run off of one 2 channel amp if desired.
I think I'd discourage the rear speakers that are pictured and spend the bucks on the sub and better front speakers. The only exception I can think of is if you plan on taking the pictured speakers outside of the truck for tailgate parties or what not. Those speakers will make it louder but they're going to destroy the staging. But if you insist on keeping the pictured speakers for whatever reason I would advise a 5 channel amp. Two front channels and two rear channels so they can be independently adjusted and the 5th channel for the woofer which can also be independently adjusted.
    Just my .02
