    First time making it. Sauteed some shallots and mushrooms and then added wine and reduced. Strained all the stuff out. Returned to heat, added some chopped chocolate and a sprig of thyme until go time. Try it out, its awesome!

    Dark, and sparingly. I added a little, mix and taste. Then repeated until I got it where I liked it. Served it with parsnip puree so it could easily have gotten too sweet for me.
