I think I might have over torqued one of the upper ball joints. Can I just back it off and retorque it to 80lbs?

yes... how far over torqued? The torque spec is to seat the tapered joint so that it doesnt spin and secondly to stretch the ball joint to keep pressure on the nut to keep it there, the castelated nut/cotter pin is a third saftey measure.

What happen was this, I had just torque down the new lower ball joint, re-adjust the torque wrench to 80lbs but forgot to lock it in place, and started torquing the new upper ball joint. It wouldn't click and I started to find it odd so my assumption was that the antiseize might be preventing it from being held in place. Removed wrench, inspect balljoint, and that was when I notice I didn't lock the wrench. Locked it and as I turn it 1/4 turn it click.
I later inspected both upper ball joints and notice the passenger side nut was further down, the driver side nut was a little closer to the cotton pin hole.
