    Yep, very easy to do. When I got mine, I set the drivers side in, pushed the clutch down till it was hitting the weathertechs, marked an outline around it with a silver sharpie giving a little extra room so it wont catch, and took a nice sharp pair of scissors to it. Took about 5 minutes. It's not the most precise cut, and I suppose you could use a box cutter or similar instead of scissors, but it clears the clutch just fine and I have never had any issues with catching on the weathertech in over 7 years.
