What is the ideal tire size for a 17"x 8" wheel?

I am wanting to stick with the 265/65 R17 stock tire size but I found some Pro Comp wheels that are the perfect style for my truck. These wheels are 17 x 8. I did a 3" spacer lift because I don't go off road and like the look of a mild lift. Because of the lift I could go to a bigger tire but prefer to keep my 265/65 R17 tire size. This way the speedo is more accurate supposedly.
Sooooooo......I just wanted to know if this tire size would fit well on an 8" wide rim or should I consider a different tire size? I also want a quiet tire that gives good fuel economy.Suggestions would be appreciated.
