Lulz. I’m 39. I still haven’t had my coffee today. The power went out and our compressors are lagging with the genny. It’s raining, and I feel like cake is not in my immediate future.

Seems about standard for a 39 though.

HAHAHAHA! What temp! Look at this guy with his fancy shmancy temperature talk.

Seriously, though...I did not use string. It was the shank end of the shoulder, so it held together just fine. I should have trimmed off the skin before scoring though. The scoring only went through the fat cap. As far as a serious answer for the temp, I don't temp my butts. I had it on the smoker for 8 hours. Normally I try to do 10 minimum, but I woke up late and 8 hours seemed like a round number. Still turned out delicious though and @bvbull200's PF made it taste amazing-er.

Also, once it hits 70*, the windows go down on the Tacoma. This is true even during the dog days of summer here in Texas. I can sweat out the heat, no problem, but I'm a wuss when it gets cold .
