    Venison 50/50 with pork makes some damn good sausage as well. Or take some backstraps, cut to medallions, wrap a half slice of bacon around them, then stick them on the grill. Option 3: Venison Stroganoff. Had it for leftovers again last night and damn it was good.

    Here's how I cook the loin or backstrap. Cut it into pieces about 1-1/2" thick. There's going to be some silver skin on the outside. Trim off all that. It's easiest if it's almost, but not completely thawed. For backstrap I typically grill it. Fire up the grill, get it to about 500-550 degrees. Should heat up for a good 10-15 minutes. Salt and pepper both sides. I use a coarse sea salt and it helps carmalize the outside. Brush EVOO on both sides. Make sure the steaks are at room temp. Place on the grill. I usually cook 3-4 minutes per side. Your grill may be hotter/cooler. That gets the steaks to rare to medium rare. They will continue to cook once removed, so it's better if they are on the rare side. Venison or wild game in general is leaner and will dry out quickly if overcooked. I'll also have a few skewers of peppers and mushrooms to go along with it. Add in an adult beverage.... Bon Appetit!

    I think my favorite venison is summer sausage with cheese and jalapenos. I'll gnaw on a 2lb stick like it's an ostrich leg.

    That's a good lookin' Taco, dig that color. I once grenaded a Borg Warner T3 turbo on my old Thunderbird Turbo Coupe. They can be finicky.

    I'm trying to find the recipe, but it uses the whole loin, sliced but not thru lengthwise. It's then filled with blue cheese, some other ingredients, wrapped with bacon and cooked on the grill. Sounds like sex on a plate!!
