I want to buy some bfg ko2 tires, 265/70/17 & some method wheels 17’’ x8.5. Will that fit or will there be a problem? I’ve read that x8.5 is too much.

Just be aware that the new wheel offset is different from a stock wheel of +25 mm. The Methods vary but going to a 0 offset moves the rim out towards the curb. going from 7" wide to 8.5 wide plus offset can add up to removing front mud flaps. So if the new wheel has 0 offset the wheel moves out 1 inch plus half the difference of the new rim width 7" to 8.5", 1.5"/2= .75 inch

Inside edge of rim went 1 inch to curb and back towards suspension .75 inch, over all difference .25 inch towards curb. Outer edge of rim move 1 inch with offset towards curb plus .75 inch of wider rim, over all 1.75" to curb. When looking a wheels just be aware of the offset and you can make a better choice.
