So I have a 2021 Tacoma SX access cab, I put a 3 inch Eibach stage one lift in the front and paired it with the 1.5 inch ICON AAL in the rear. I also have the JBA high caster uca’s. I’m looking into buying the Summit Dakars in 17x9 with -25mm offset. I am wondering what is the biggest size tire I can fit with little to no trimming. I’m looking at BFG Ko2’s. Thanks in advance!

It might sit really high in the front, but you can always add a 1" block to the rear to level it out. The access cabs tend to sit higher with lifts.

You may as well shoot straight for 285/70R17, if you want big, 305's or 315's will fit the wider rims but you'll run into other issues with rubbing.
