Why do motorcycles get away with using 1 relay for both turn signal sides, but trucks/cars need 2?

Redundancy I would imagine, and or especially for the hazard lights, motorcycles don't (typically) have 4 way flashers.

Also it may have something to do with how motorcycles usually have the front turn lamps lit for identification then flash when turning thus possibly switched neutral or something.

    I don’t understand the question.
My truck only has 1 and it’s called a Flasher Relay?
And it’s not like a normal relay. It’s one unit.
It controls all the signal lights. Even the hazards.

Not any of the 1st or 2nd Gens I’ve seen.
The 3rd Gens don’t even list one.
It’s been rumored they do, but it’s permanently affixed inside the gauge cluster.

    What truck do you have?
