Will 18inch rims with 285/60 rub on a 3 inch lift?

Maybe. The diameter is fine at 31.5 but the width is the potential problem. To keep 11.5s from rubbing on your knuckle and/or UCA the wheel backspacing will need to be different than stock. How different will determine if/how bad they rub on the pinch weld, cab mounts, etc.
