Looks like the new Bilstein 5100s only lift 2" at the max height of the lift. Is that enough to clear 285/70/17 without additional coil springs?

It's got a cop motor, a 440-cubic-inch plant. It's got cop tires, cop suspension, cop shocks. It's a model made before catalytic converters so it'll run good on regular gas.
Small lifts don't help you clear tires. They just raise your ride height. To clear tires you need alignment, wheels (or spacers), and cutting frame/fenders

How do you feel about cutting? Would you consider a more narrow tire, like a 255/85R16 or 255/80R17?

I bought 265/70/17 for my 17x9 -12 wheels but thinking of changing tire size and was just curious if the Bilsteins I have will work if I change tire. Haven't installed anything yet

i'm running the old 5100 @ 1.75" and clearing 275/70/17 with no rubbing/trimming. i am also running oem mud guards.

question: is anyone running 285/70/17 @ 1.75"? if so did you need a trim? rub?

I dont know what trim package you have, but I can confirm that 285s will fit with the 2nd gen 5100s cranked up to the 2.5 setting and stock TRD OR springs and an AAL in the rear.... I've seen in on my buddies truck.

you MIGHT have to do a little plastic trimming or heat gun work, but if you do, it wont be much.

and some people (depending on wheels and offset) will have to do the Cab Mount Chop (my buddy didnt)

285's will fit but it all depends on tire an wheel combo as well. My brother in-law has 5100 with oem coils set at the 4th notch an has zero rub at all. he's running 285/70/17 good year duratracs with trd pro t4r rims.
