It's been about three years for me & those were not that good , so hard to find good ribs anymore without spending a paycheck.

Down here in the SE armpit, best ribs can be found at Oh Dennis! Saloon & Charcoal House in north Racine. I don't even care what they cost, they're f'in delicious.

+1 to this, have fun and come back in one piece. Really excited to see some pics!

As a new guy here, do we like only beer or do we like Beer AND bourbon?

As far as ribs go.. Don't make me break the smoker out early.. best ribs in SE WI would be Pats rib place (formerly in Waukesha now downtown in the public market). Elkhorn also has a free Ribfest every summer..

The best ribs I ever had was at Capt Porkies in Zion, but I might be a little biased cause I was buddy's with the owner, we kinda lost touch when he moved out to the hi-way, now one of his son's have taken over & I don't get over that way much so i don't bother seeing as he's not there but I hear it's still killer ribs.

Beer, bourbon, Scotch, Brandy, Tequila, Rum, Gin, Vodka, Mezcal, wine, whatever. I usually make Brandy old fashioned's (Wisconsin/Prohibition style) at camping trips.

I had them like two weeks ago when hyvee was cooking them out front and had $10 racks. $20 well spent lol especially when they are normally $25/rack now

I made some ribs a few weeks ago on the pellet smoker. I'm usually really critical of my own cooking, but I must say that these turned out really good.:hungry:

And before anyone asks, I'm not bringing the pellet smoker to Tigerton.

I am so pumped about this trip! Hitting the road with @Camerasandcoffee early Friday morning. I created an account here in June of 2022 when I was looking for tonneau cover advice. I found you truck nerds, and less than 2 years (and many credit card payments) later my truck and I are on our way to the Ozarks following the master @pearing . Going to be an amazing adventure!

The snow will be part of the adventure, good or bad. The timing is impeccable.

A couple of years ago, I tried my hand at deer ribs. I have always tossed them out with the carcass. When I started deer hunting, everybody said they were worthless. I took some hides to a taxidermist, and he gave me his recipe. Simmering boil for 4 hours, a 'lil Sweet Baby Ray's and on the grill for a few minutes. Kimm'r doesn't eat leftovers, but she ate these. Damn were they good. Wish I had known about this years ago. All of those ribs I wasted....

Venison ribs are great! My old man use to always toss them all in a big nesco cooker.
Pork and beef ribs I get every year when I order my 1/4 beef and half a hog. Usually smoke and smother.

S'possed to be 1"-3" near the state line. I'm not too concerned. Rich is probably gonna hit the brunt of it. No worries, Rich. We'll wait for you.

Just have to build modularity (is that really a word-Hey @CygnusX191...) Mine has LOTS of flexibility in configuration(s) and I can add as needed-only limited by imagination. Also, because of how we built it I can also go back to the bed pretty easy if I want too. That group was planning to sell those but don't know if they have gotten to production yet. The AL is lighter than mine for sure...
